For a long time, drinking a cocktail in Marrakech meant two things: a mediocre mojito in a hotel bar or a bottle of vodka in a dubious club. Barometre changed the game. Opened on a quiet Gueliz street, behind an unassuming facade, this cocktail bar imported the codes of craft cocktails to Marrakech — and adapted them intelligently.
The menu is short — about ten cocktails, no more — and it changes with the seasons. Each creation uses at least one local ingredient: orange blossom water, Taliouine saffron, Souss citrus, Atlas thyme honey. The bartender doesn't put on a show — no flames, no smoke — but every gesture is precise, every measurement exact. The result is a cocktail with personality that doesn't need to shout.
The decor is minimalist and owns its stance: dark wood counter, high stools, low lighting, zero superfluous decoration. It's a bar made for drinking, not for being seen. The room is small — thirty seats maximum — which creates an intimacy found nowhere else in Marrakech. Evenings from 9 PM, you often have to wait for a table.
Prices are fair for the quality: expect between 90 and 130 dirhams per cocktail. It's not cheap, but it's the price of a drink made with premium ingredients and real skill. The wine is also well chosen — the list favors Moroccan estates (Volubilia, Tandem) with a few French references.
The clientele is a mix of young Marrakech professionals, expats, and informed travelers. No lost tourists — you have to know the address to find it.
Barometre earns its place because it proved that Marrakech could compete with major cities on cocktails — without imitating anyone.
